Menu Plan Monday

It's been awhile since I have posted a menu, some weeks I have even sat down and been blank. I am in a menu rut! The seasons are changing and my hubby isn't eating with us as often so I don't always make bigger meals when he is gone. Those are the nights we have breakfast for dinner which we all love, but he doesn't like.

So I spent some time this last week going through my cookbooks, magazines, etc. trying to be inspired with some new easy and not as heavy recipes. I will be making some time this morning to visit as many blogs as I can too to get some inspiration. (Not too much time as it is suppose to be gorgeous today)

This is what we are having for dinner over at my house this week.

Monday: Mini Tacos, Bean burritos, spanish rice, corn
Tuesday: Ratatouille with pasta - this looks so good!


Wednesday: Pancakes, sausage, and fruit salad
Thursday: Last day of school! Slumber party, so we will be ordering pizza

Friday: Basil Tomato Grill Cheese sandwiches

Saturday: Grilled Chicken, Potatoes and corn on the grill

Sunday: Birthday Party - my nephew turns Six today!

Menu Plan Monday

Real simple this week
Monday: Dinner out - Problem this morning with gas lines bursting, AHHH! So calling plumbers and such to fix. No Gas. No heat, No Stove, No Hot water. This should be a fun day!
Tuesday: Pancakes and bacon, fruit salad
Wednesday: Spaghetti, salad, garlic bread
Thursday: Chicken pot pie, jello w/ fruit
Friday: I get to go away for two days for a woman's retreat for church. I am soo looking forward to this. MIL will have to get dinner for kids or maybe they will just order pizza.
Saturday: I will still be away (hee, hee) so Dad will get dinner for family. Maybe Hamburgers or Hot Dogs Grilled mmmm.
Sunday: Salisbury Steak, buttered noodles, green beans

Menu Plan Monday

Happy St. Patricks Day!!
We celebrated with family yesterday and had all the good stuff, The family loved the Rueben casserole. This week, most of my menu comes out of a page from Parenting Magazine.

Our Menu for this week goes a little something like this...

Monday: Green Eggs and Ham, Shamrock shakes
Tuesday: Dinner Out -YAY!



Thursday: White Chili




Saturday: Pesto Ravioli

Sunday: HAPPY EASTER!! Easter dinner. Ham, Augratin potatoes, vegetables. I am in charge of desserts so I will be making a coconut chifon cake, birds nest cookies and an apple pie. mmm, mmm ,mmm!
All of the meals I got out of the magazine have the recipes linked. They all are called One Dish Wonders. We will see how wonderful they are.

Meal Plan Monday

Being snowed in is just no fun. I mean it is for a day or so, but on a day like today, when I have been cooped up for days - I JUST GOTTA GET OUT! - You know what I mean. I'm getting a little stir crazy. It doesn't help when everyone has been sick, so between snow days and sick days we haven't had a full week of school this whole year (2008). Have my 1st grader home today possibly with strep throat and waiting for the Dr's office to call. I am hoping I can beg them to just call in a Rx for us. I don't feel like taking everyone out and waiting in a Dr's office. .
One thing that is nice about being stuck inside is it gave me a chance to go through old magazines and get rid of them and find some new recipe's! So this week I am taking our menu from Simple & Delicious magazine. Trying new things, we'll see how they go over.

Monday: Chicken Tortilla Bake, corn muffins
Tuesday: Ham N' Cheese Pasta, Rolls
Wednesday: Vegetarian White Bean Soup, Bread sticks
Thursday: Chicken over Curly Noodles, Broccoli
Friday: Homemade Stuffed crust pizza
Saturday: Birthday Party- eating there
Sunday: Annual Saint Patty's dinner w/ Family. Corned beef, Reuben Casserole, Shamrock shaped butter cookies, Grasshopper cheesecake and whatever other goodies the family brings!

Menu Plan Monday


It is sooo nice and sunny today! Suppose to be in the 50's I cannot wait to get out for a walk!
Need to start planning some healthier(lighter- less calorie laden) meals but for now here we go:
Monday: Cheese Quesadillas, Rice
Tuesday: Chicken Pot Pie, Jello w/ Fruit
Wednesday: Pork Chops, Mushroom Noodles, Green Beans
Thursday: Smoked Sausage, Fried potatoes
Friday: Spare Ribs in the crock pot, buttered noodles, pork & beans
Saturday: Bacon Cheeseburger meatloaf, mashed potatoes, mixed veggies
Sunday: Dinner out!

Menu Plan Monday


What's for dinner this week? Well I was going to start trying a new recipe each week and after I sat down and wrote out the menu, I realized nothing was new. Oh well we'll try that next week:)
So this week here is what we are having.
Monday: Smoked Sausage, Beef Rice, and Carrots biscuits. My son's fave meal
Tuesday: Chicken Parmesan, green beans
Wednesday: Sloppy joes, tator tots, applesauce
Thursday: Cheese Ravioli, Salad and Garlic Bread
Friday: Beef Taco Skillet, fiesta corn and corn muffins
Saturday: Date night! Mom and Dad out to dinner (4th Saturday in a row we've had a date!! I am loving this!!!)
Sunday: BBQ spare ribs, homemade mac & cheese, vegetable blend crescent rolls

Menu Plan Monday

Getting back into planning weekly, my pantry has been moved around due to a remodel and I have lost focus just having a general list of meals on hand. Need to plan each day again. So here is what we are eating in our house this week. What is on your menu?
Monday: Beefy One Pot Dinner, biscuits
Tuesday:Taco Bake, corn on the cob
Wednesday: Ravioli Bake, Salad, Garlic Bread
Thursday: Chicken Nacho Bake
Friday: Steak, Twice baked potatoes

I don't have Saturday or Sunday planned yet. I do my grocery shopping on Friday morning so I plan out the weekly meals on Thursday. I have linked the recipes. Menu Monday and other ramblings

I have been doing things for meal planning a little different these days. Since my hubby works pretty much about 9-10 mths out of the year and will be home here in a few weeks, I have been trying to make sure we have at least 3 weeks worth of meals on hand. So instead of just planning weekly, I have a running list on the side of our fridge of meals on hand and we just pick something. It has worked really well although right now we are full. I won a 10lb turkey from my son's pto raffle and we almost didn't have room in the freezer for it!!

Monday: Chicken Quesadillas and Tomato soup -chicken soup for Natalie. She caught a bug yesterday:(
Tuesday: Mother in Law cooking
Wednesday: Tator tot casserole
Thursday: Gobble, Gobble - Guess what we'll be eating??
HAPPY THANKSGIVING!
Friday: Thanksgiving leftover casserole - Love this!!
Saturday: My daughter's 5th Birthday party. Pizza and cake!!
Sunday: Spaghetti pie, salad

We don't eat turkey for days and days I try to make as many meals as I can out of the leftovers and freeze them so we can enjoy turkey a little here and there. Last year I was able to make
Turkey soup, Turkey Chili, Turkey Tetrazzini and The Turkey Casserole

LEFTOVER THANKSGIVING CASSEROLE
3 Tbls butter
2 Tbls flour
1can (12 oz) Evaporated Milk
1 C water
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp onion powder
2 Tbls butter
1 C finely crushed herb-seasoned dry bread stuffing mix (I used stove top)
1 C cooked, diced turkey
1 C shredded cheddar cheese
2 C leftover mashed potatoes
Procedure
1. Preheat oven to 350 degrees. Lightly grease a 9x13 baking dish

2. Melt 3 Tbls butter in a saucepan over low heat. Blend in flour, Slowly stir in evaporated milk and water, then season with salt, pepper and onion powder. Stir sauce over low heat for 5 min.

3. In a separate saucepan, over low heat, melt 2 tbls butter. Blend in the dry stuffing mix.

4. Place turkey in the baking dish, pour sauce over the turkey, then sprinkle with Cheddar cheese. Spread mashed potatoes over cheese. Top mashed potatoes with the stuffing mixture.

5. Bake 45 min

I am getting almost giddy this week knowing it is the official kick off of the Christmas season. We had an early Thanksgiving get together this past weekend with family and it really put me into high gear! I really am looking forward to this Holiday with our 2 year old. She is really starting to talk and I know she will be so much fun!

Menu Plan Monday


Here we go back into fall in full swing! Last night the temps were to be freezing and the trees are all in full color. A week from now it will be bare and chilly. yuck. So I am gearing up with my comfort foods. yum! Also gearing up with a workout routine. I will not let this Holiday season and all its yumminess hang around on me!!
So for the week this is what we will be chowing on.
Monday: Spaghetti pie, Parmesan and Romano cheese garlic bread, salad
Tuesday: Trick or Treat night. We go to my grandma's for dinner and let them see the kids in their costumes, then come home and pass out treats. So pizza for dinner tonight.
Wednesday: Cheddar Baked Potato Soup, Bread sticks
Thursday: Mother in Law cooks, who knows what it will be this week!
Friday: Sausage Penne Pasta, Green beans
Saturday: Sloppy Joes, Tator Tots, corn on the cobs
Sunday: Pork Roast, mashed potatoes, Mediterranean style veggies.

Menu Plan Monday

Okay it's been awhile since I've posted a menu. I make one out weekly - It truly has been a lifesaver for me in this house. We were forever doomed to eat hamburger helper and pizza because I never remembered to take something out of the freezer, or I didn't have something on hand. So now I always have 7 or more meals ready to be made. I love it!

So here is what we are eating in our neck of the woods this week:

Monday: Taco salad, corn cake - this new twist is sooo good!
Tuesday : Spaghetti, meatballs, salad, cheese filled bread sticks from Schwans -yum! -Boy Scouts tonight
Wednesday: Pizza - also from Schwans, veggies and dip - Awana tonight
Thursday: Sloppy Joes, Tator Tots, corn on the cob - Middle School Football Game tonight
Friday: Chicken Pot pie, peach jello with peaches
Saturday: There are like 3 Fall family fun festivals going on. Probably hit one of those and get some grub. Otherwise BBQ Ribs on the grill
Sunday: Getting pictures taken with kids and all their cousins. Hoping to just hit a restaurant after the appointment if all goes well.

Meal Plan Monday

Well last week's menu turned into something completely different. So pretty much the plan is most of what I had planned for last week since I still have it all on hand. With the exception that I have a recipe to share. Most of you who read my blog probably see the local paper, but I found this snack in Saturdays paper and thought it looked yummy so we made it. It was also found on the betty crocker website which you can see here.

Frozen Yogonanas
2 containers (6oz each) strawberry yogurt
14 popsicle sticks
7 lg bananas
2 c finely crushed golden grahams cereal

Put waxed paper down on a cookie sheet.
Cut the bananas in half. Insert popsicle stick, dip into yogurt and then sprinkle them with cereal.

My tip to you is make sure the cereal is finely crushed. We had some chunkier pieces because I thought it would be nice and crunchy. They were soft and the kids didn't care for those. The crushed ones were yummy though!

As far as food for the week it will be a mix

Monday: mil cooking - who knows what goodies we will be served

Tuesday: BLT sandwiches and fries

Wednesday:Ravioli, italian style veggies, garlic bread

Thursday:chicken and potatoes

Friday: Southwestern salad - if this one is good which it looks like it will be, I will share the recipe next week.

Saturday: Hot dogs, pork and beans

Menu Plan Monday

It has been awhile since I have typed out my meal plan, why I am doing it today? Who knows. Not a particularly exciting week, Food wise anyways. I did make an Ice Cream cake for my MIL's b-day over the weekend, I was pleasantly surprised that it came out right and was yummy! So I will share the recipe. Really Easy and the kids helped me make it.

Monday: Mother in Law Cooking, not sure what is for dinner.
Tuesday: Spaghetti, meatballs, salad, and garlic bread
Wednesday: 4th of July! two cookouts to make rounds to. I am making s'mores bars to share.
Thursday: Meatloaf, buttered egg noodles, mixed vegetables
Friday: Frozen pizzas, salad
Saturday: Hot Dogs and pork and beans.veggies and dip probably some applesauce

Sunday: Steaks, baked potatoes, grilled veggies.

I have to say it is a pretty kid friendly week, hopefully we should have no objections to dinner!

Haven't had much time free on the calendar this week, but managed to squeeze in a quick menu for this week. I have my mother in law staying with us this week so we'll see how this week goes...

Tuesday: Tacos / taco salad

Wednesday: Spaghetti, meatballs, salad

Thursday: Smoked Sausage and penne pasta, green beans - never made last week

Friday: Crunchy Onion chicken, rice, Mixed vegetables

Saturday: Grilled Brats and Hot Dogs

Sunday: Beef Steaks with bacon, buttered noodles, salad

Menu Plan Monday

Hello! Happy Monday! This past weekend was a long one and I am so ready for this week to begin! Although looking at my calender this week will be a full one too! I guess that is what happens at the end of the school year...

So here is my week, somehow I managed to sit down Friday morning and make my menu plan out and my grocery list. I am thankful I did or I would be clueless right now. I had no time to do it this past weekend!

Monday: Chicken Quesadillas, corn, bean soup
Tuesday: Salisbury steak, mash potatoes, salad
Wednesday: Natalie's actual birthday, last night of Awana. - Maybe stop at McDonald's
Thursday: Penne Pasta and smoked sausage, broccoli, rolls
Friday: Mom out for dinner! yay! Hamburgers and fries for dad and kids
Saturday: Aloha Pizza - my friend has me hooked on this! When I find the recipe, I'll post it.
Sunday: Beef and shrimp kabobs, Rice

Menu Plan Monday


Hello and Happy Monday! I am working on this post late Sunday night as I am anticipating weather like we had this weekend (absolutely perfect) and I am planning on being super productive today! I will be back on later in the day to check out other menus for some inspiration. I did some research on some of the MPM blogs that I read and thought we might go ahead and have a brand new recipe week. Here it goes, I'll let ya know how they go over!
Monday: Slow Cooker Beef and Bean Burritos. I got this recipe from Rona over at Berry-Morins Bits and Tips.
Tuesday: Shrimp Fried Rice this recipe is from Barb, SFO at Mom's Fridge.
Thursday: Steak, baked potatoes and salad. No, I know this isn't a new recipe, but I was inspired by Annie over at my life as Annie. I have been wanting some good steak on the grill. mmmm I could go for some right now!
Friday: Ordering pizza. Okay not something new and exciting, but hey- maybe I will order something crazy like vegetables on it ? I just might - you never know!
Saturday: Slow cooker pineapple pork roast which I saw on Dana's blog and I believe she noticed it first on Laura's blog. Anyhow, looks yummy and although I usually don't do crock pot meals on the weekend. It might be nice to just hang out and enjoy the family Saturday instead of messing around in the kitchen!:)
So there is my planning for the week. I believe our dessert for the week will be snicker doodles. Ethan loves anything Cinnamon and he hasn't picked something in a while, so his pick is it!
